Cheddar

The popular Cheddar cheese is a firm textured, pale yellow to off-white cheese, but may be colored orange with the addition of annato. It tends to have a sharp, earthy, pungent flavor. Making cheddar cheese involves a process called “cheddaring” which entails cutting a drained curd mass into slabs and allowing the stacked slabs to set for 2 hours at 100 degrees, turning the slabs every so often.
