Colby

Colby is a soft, moist American cheese (originating in Wisconsin near the town of Colby) similar to cheddar, but milder because of the washed-curd process used to make it. During the cheese making process, some of the whey is replaced with water, reducing the curd’s acidity resulting in a mild, gentle flavor. It makes a really good table cheese for grating, grilling, snacking, sandwiches, salad, etc.
