Derby
Derby cheese, originating in Derbyshire, England during the 16th century, is light ivory to yellow in color, with an open texture similar to cheddar and a mild, buttery, creamy flavor. It is a semi-firm cow’s milk cheese that melts well and is used mainly as a table cheese. You will usually find Derby cheese in the Sage Derby variety in the market - it has been flavored with sage (or herbs) and is marbled green.
