Emmental cheese

Emmental is a creamy yellow, semi-hard raw milk cheese with large holes with a mild and slightly nutty flavor. It originated in the Emme valley of Switzerland from pasture fed cows. The characteristic “Swiss cheese” holes are formed during the curing process when carbon dioxide gas is released in the interior of the cheese by the starter bacteria. Emmental melts well and is a perfect choice for sandwiches, heated dishes, grilled foods, fondues and gratins.
